Berry Fruity Crumble Snacks

Makes around 3 medium sized tarts

Ingredients:

  • 110g oats
  • 30g whole-wheat flour
  • A tiny pinch of baking powder
  • 30g unsalted butter
  • 30-40 ml hot water
  • 1 dessert spoon of thick set Greek yogurt (or crème fraiche)
  • 1 handful of fresh berries (e.g. blueberries, strawberries, raspberries)

Method:

  1. Add the oats, flour and the baking powder to a bowl and stir together.
  2. Next add the butter and use your fingers to rub the mixture together until it’s a grainy consistency, similar to that of breadcrumbs.
  3. Add the water, a little at a time to ensure you don’t add too much, until the mixture becomes a doughy ball.
  4. Use some mini tin tart trays to press the mixture into each until flat and even. You can use fairy cake cases or a tart baking tray to do this too, if you don’t have individual mini tin trays.
  5. Pop in a pre-heated oven at around 190℃ for 15-20 mins or until they start to brown slightly on top.
  6. Once they are ready, take them out of the oven and place on a cooling rack and allow to cool for around 10 mins.
  7. Once they are cool enough, you can add the yogurt to the top and spread it around the base before topping with a handful of berries.
