Strawberry Ricotta Crostini
Simple, elegant, and full of summer flavour.

• 1 baguette or crusty bread
• Olive oil, for brushing
• Ricotta cheese
• Fresh strawberries, thinly sliced
• Optional: balsamic glaze, baby basil leaves
Method
Preheat oven to 180°C (160°C fan) / 350°F / Gas 4. Slice the bread diagonally into 1cm thick slices. Brush with olive oil on both sides and arrange on a tray. Bake for 10–12 minutes, flipping halfway, until crisp and golden. Top with ricotta, sliced strawberries, and optional balsamic glaze or basil.
