Ingredients:

  • 500g fresh berries – strawberries, blackberries, blueberries and raspberries (British if in season)
  • 2 tbsp honey
  • Small bunch of fresh mint, chopped roughly
  • Juice of 1 lime
  • ½ tsp vanilla extract

Method:

  1. Make a simple dressing with the lime juice and honey. Adjust to your liking.
  2. Chop the larger strawberries and mix into a large serving platter.
  3. Add the remaining mixed berries.
