This warm breakfast skillet is jammy, buttery and full of delicious berries. The toasted brioche crumbs bring a lovely crunch and it tastes almost like a breakfast pudding whilst still being nutritionally balanced.

Berries are excellent for heart and brain health, and pairing them with yoghurt or a little protein on the side can help create a more balanced, sustaining breakfast.

Serves:

3–4

Ingredients:

  • 500g fresh mixed berries (British if in season)
  • 1 tbsp honey
  • Juice of ½ lemon
  • 2 slices brioche, torn into crumbs
  • 30g butter
  • 1 tbsp flaked almonds
  • Yoghurt to serve

Method:

  1. Melt half the butter in a large heavy skillet or frying pan and toast the brioche crumbs with the almonds until golden.
  2. Remove and set aside.
  3. Add the remaining butter, berries, honey and lemon juice to the pan.
  4. Cook for 3-4 minutes until softened and juicy.
  5. Scatter over the toasted crumbs and serve with yoghurt.
