Ingredients:
- 6 thick slices brioche, challah or sourdough
- 3 eggs
- 200ml milk
- 1 tsp vanilla extract
- 1 tbsp caster sugar
- Butter, for frying
- 150g fresh blueberries (British if in season)
- 100g fresh blackberries (British if in season)
- 100g fresh raspberries (British if in season)
- Maple syrup, to serve
Method:
- In a shallow bowl, whisk together the eggs, milk, vanilla and sugar.
- Dip each slice of bread into the mixture for 20–30 seconds on each side.
- Heat a knob of butter in a frying pan over medium heat.
- Cook the bread for 2–3 minutes on each side until golden and cooked through.
- Serve warm with the fresh berries and a generous drizzle of maple syrup.
