These are crisp on the outside, soft and fruity inside, and surprisingly delicious for breakfast. Juicy berries and creamy almond butter tucked into golden toasted wraps with a few toasted hazelnuts and little maple syrup make them feel playful and comforting and agave nectar is used in place of artificial sweeteners here to give it a healthier twist.

Berries are a powerhouse of antioxidants and hydration. They are linked to better memory and support cognitive function. Almonds and hazelnuts are full of healthy fats, fibre, protein, magnesium, and vitamin E and using just a little agave gives sweetness without needing lots of sugar.

Ingredients:
- 2 soft flour tortillas
- 100g almond butter
- 120g fresh berries (British if in season)
- 2 tsp agave nectar
- 1 tsp lemon zest
- Chopped toasted hazelnuts
- Butter for cooking
Method:
- Heat tortillas in a heavy based pan.
- Spread almond butter over one half of each tortilla.
- Top with berries, hazelnuts and a drizzle of Agave nectar.
- Leave open and serve as is or fold over and cook in a buttered frying pan for 2–3 minutes on each side until golden.
