These are crisp on the outside, soft and fruity inside, and surprisingly delicious for breakfast. Juicy berries and creamy almond butter tucked into golden toasted wraps with a few toasted hazelnuts and little maple syrup make them feel playful and comforting and agave nectar is used in place of artificial sweeteners here to give it a healthier twist.

Ingredients:

  • 2 soft flour tortillas
  • 100g almond butter
  • 120g fresh berries (British if in season)
  • 2 tsp agave nectar
  • 1 tsp lemon zest
  • Chopped toasted hazelnuts
  • Butter for cooking

Method:

  1. Heat tortillas in a heavy based pan.
  2. Spread almond butter over one half of each tortilla.
  3. Top with berries, hazelnuts and a drizzle of Agave nectar.
  4. Leave open and serve as is or fold over and cook in a buttered frying pan for 2–3 minutes on each side until golden.
