This warm breakfast skillet is jammy, buttery and full of delicious berries. The toasted brioche crumbs bring a lovely crunch and it tastes almost like a breakfast pudding whilst still being nutritionally balanced.

Berries are excellent for heart and brain health, and pairing them with yoghurt or a little protein on the side can help create a more balanced, sustaining breakfast.
Serves:
3–4
Ingredients:
- 500g fresh mixed berries (British if in season)
- 1 tbsp honey
- Juice of ½ lemon
- 2 slices brioche, torn into crumbs
- 30g butter
- 1 tbsp flaked almonds
- Yoghurt to serve
Method:
- Melt half the butter in a large heavy skillet or frying pan and toast the brioche crumbs with the almonds until golden.
- Remove and set aside.
- Add the remaining butter, berries, honey and lemon juice to the pan.
- Cook for 3-4 minutes until softened and juicy.
- Scatter over the toasted crumbs and serve with yoghurt.
