Berry Energy Snack Pot

Makes a single snack pot

Ingredients

  • 3-4 strawberries, sliced
  • 2-3 tablespoons natural yoghurt (or vegan yoghurt)
  • 4-5 raspberries, plus a few extra for garnish
  • 4-5 blueberries, plus a few extra for garnish
  • 2 dried apricots sliced, or can used dried dates or mango.
  • Sprinkle of seeds – chia, flaxseed, linseed.

Method

1. Slice the strawberries across ways forming strawberry circles.  Place these at the base of the pot.

2. Spoon over the natural yoghurt.

3.  Scattered the raspberries over the next layer.  These can also be mushed, but reserver a few whole ones to add at the end.

4.  Next up, sprinkle over some mushed or roughly chopped blueberries, again reserving a few whole ones.

5.  Add in the wedges of dried apricots.

6.  Add over a few pinches of chia seeds, flaxseeds or linseeds.

7. Finish by topping with the leftover whole raspberries and blueberries
