Blackberry and ricotta breakfast toast with pistachios and lemon honey

Creamy ricotta spread over warm toasted sourdough with juicy berries and a drizzle of lemon honey is simple but unbelievably delicious. It tastes fresh, creamy, sweet and slightly tangy all at once, with the berries adding little bursts of brightness in every bite and the pistachios adding a deep nutty flavour.

Ingredients:

  • 2 thick slices sourdough
  • 150g ricotta
  • 1tsp honey, plus extra for drizzling
  • Zest of ½ lemon
  • 150g fresh mixed berries (British if in season)
  • 1 tbsp chopped pistachio nuts

Method:

  1. Toast the sourdough until golden.
  2. Mix the ricotta with 1tsp honey and the lemon zest.
  3. Spread generously over the toast.
  4. Top with fresh berries, pistachio nuts and a little extra honey.
