Ingredients:

  • 100g plain flour
  • 2 eggs
  • 300ml milk
  • 1 tsp vanilla extract
  • 1 tsp honey or maple syrup (optional)
  • Butter or oil for cooking
  • 100g fresh blackberries (British if in season)
  • 100g fresh blueberries (British if in season)
  • Extra honey or maple syrup to serve

Method:

  1. Add the flour, eggs, milk and vanilla to a bowl, and whisk until smooth. (Set aside for 30 mins)
  2. Heat a small amount of butter or oil in a non-stick pan over medium heat.
  3. Pour in a thin layer of batter and swirl to coat the pan.
  4. Cook for about 1-2 minutes, until golden, flip and cook for another 30 seconds.
  5. Repeat with remaining batter.
  6. Fold crepes and fill or top with fresh blackberries and blueberries, then drizzle with extra honey or maple syrup to serve.
