Ingredients:
- 100g plain flour
- 2 eggs
- 300ml milk
- 1 tsp vanilla extract
- 1 tsp honey or maple syrup (optional)
- Butter or oil for cooking
- 100g fresh blackberries (British if in season)
- 100g fresh blueberries (British if in season)
- Extra honey or maple syrup to serve
Method:
- Add the flour, eggs, milk and vanilla to a bowl, and whisk until smooth. (Set aside for 30 mins)
- Heat a small amount of butter or oil in a non-stick pan over medium heat.
- Pour in a thin layer of batter and swirl to coat the pan.
- Cook for about 1-2 minutes, until golden, flip and cook for another 30 seconds.
- Repeat with remaining batter.
- Fold crepes and fill or top with fresh blackberries and blueberries, then drizzle with extra honey or maple syrup to serve.
