Fruit Slushies

Such a quick and easy fresh treat! Try your own combinations too - a squeeze of orange or lemon juice with any berries adds an extra zing, or 1/2 tsp of finely grated lime zest, or try a small handful of basil leaves with strawberry.

 

Each recipe makes 2

Prep time 5 minutes

You will need a blender

 

Minted Blueberry and Raspberry

 

100g each of blueberries and raspberries

20 ice cubes

2 tsp maple syrup or runny honey

splash fizzy water

6 mint leaves plus extra to garnish

 

1. Blitz the berries in a blender until completely broken down.  Add the ice and maple syrup or honey and blend until you have broken down the ice to a slush.  Taste adding more maple syrup if required. 

2. Add the water and mint and give it one last blitz before spooning into glasses and serving garnished with mint.

 

Strawberries and Cream

 

200g strawberries, hulled, plus a few extra wholes ones to decorate

20 ice cubes

100ml coconut drink, or any dairy alternative or milk

Honey or maple syrup to taste

 

1. Blitz the strawberries in a blender until smooth.  Add the ice blitz again to create the slushy, then add the coconut drink and blend until smooth but still icy.  Taste adding maple syrup or honey if needed. Serve topped with a strawberry.
