This breakfast is wonderfully indulgent with fluffy waffles, crisp maple-glazed bacon and sweet berries packed with goodness. The thyme honey adds a delicate herbal note that makes the whole dish feel extra special, balancing the sweet and salty flavours beautifully.

Ingredients:

For the waffles:

  • 200g plain flour
  • 2 tsp baking powder
  • 1 tbsp caster sugar
  • 2 eggs
  • 300ml milk
  • 60g melted butter

For the bacon:

  • 8 rashers streaky bacon
  • 3 tbsp maple syrup

To serve:

  • 200g fresh berries (British if in season)
  • 2 tbsp honey
  • 1 tsp fresh thyme leaves

Method:

  1. Heat the oven to 180°C fan / 200°C.
  2. Lay the bacon on a lined tray, bake for 1012 minutes until sticky and crisp. Remove the tray from the oven and brush the bacon with maple syrup and bake for 3 more minutes until crispy.
  3. To make the waffle batter, mix the flour, baking powder and sugar in a bowl.
  4. Whisk together the eggs, milk and melted butter, then stir into the dry ingredients.
  5. Cook the batter in a waffle iron according to the manufacturer’s instructions.
  6. Mix the honey with the thyme leaves.
  7. Serve the waffles topped with bacon, fresh berries and thyme honey.
