This breakfast is wonderfully indulgent with fluffy waffles, crisp maple-glazed bacon and sweet berries packed with goodness. The thyme honey adds a delicate herbal note that makes the whole dish feel extra special, balancing the sweet and salty flavours beautifully.

Ingredients:
For the waffles:
- 200g plain flour
- 2 tsp baking powder
- 1 tbsp caster sugar
- 2 eggs
- 300ml milk
- 60g melted butter
For the bacon:
- 8 rashers streaky bacon
- 3 tbsp maple syrup
To serve:
- 200g fresh berries (British if in season)
- 2 tbsp honey
- 1 tsp fresh thyme leaves
Method:
- Heat the oven to 180°C fan / 200°C.
- Lay the bacon on a lined tray, bake for 10–12 minutes until sticky and crisp. Remove the tray from the oven and brush the bacon with maple syrup and bake for 3 more minutes until crispy.
- To make the waffle batter, mix the flour, baking powder and sugar in a bowl.
- Whisk together the eggs, milk and melted butter, then stir into the dry ingredients.
- Cook the batter in a waffle iron according to the manufacturer’s instructions.
- Mix the honey with the thyme leaves.
- Serve the waffles topped with bacon, fresh berries and thyme honey.
