This is one of the most satisfying breakfasts because it is creamy, cool and naturally sweet, with juicy berries and the lovely crunch of toasted seeds on top. It feels indulgent but is wonderfully wholesome, and it is perfect for busy mornings because everything is ready to go straight from the fridge.

Fresh berries are packed with antioxidants and vitamin C to support immunity, skin health and overall energy. Oats are full of soluble fibre, which helps support digestion, keep you fuller for longer and regulate blood sugar levels and the seeds provide healthy fats, minerals and protein.

Ingredients:

  • 100g rolled oats
  • 1 tbsp pumpkin seeds
  • Toasted flaked almonds
  • 1 tbsp sunflower seeds
  • 300ml milk (any kind, oat, almond etc.)
  • 150g Greek yoghurt
  • 1 tbsp honey or maple syrup
  • 150g fresh berries (British if they’re in season)
  • 1 tsp vanilla extract

Method:

  1. Toast the pumpkin and sunflower seeds in a dry frying pan for 2–3 minutes until fragrant, then leave to cool.
  2. In a bowl or jar, mix the oats, milk, yoghurt, honey and vanilla.
  3. Cover and chill in the fridge overnight.
  4. Spoon into bowls or jars and top with the toasted nuts, seeds and fresh berries before serving.
