This granola is irresistibly crunchy and golden, with deep toasted almond flavour and sweet coconut running through every spoonful. Paired with fresh berries, it tastes bright, nutty and full of texture, making breakfast feel both wholesome and special.

Ingredients:

  • 300g rolled oats
  • 120g whole almonds
  • 60g flaked almonds
  • 60g desiccated coconut
  • 3 tbsp coconut oil, melted
  • 3 tbsp maple syrup or honey
  • 1 tsp vanilla extract
  • Pinch sea salt
  • Fresh berries (British if they’re in season)
  • Yoghurt or milk, to serve

Method:

  1. Heat the oven to 170°C fan / 190°C.
  2. Mix the oats, whole almonds, flaked almonds, coconut and salt in a large bowl.
  3. Stir in the melted coconut oil, maple syrup and vanilla.
  4. Spread onto a baking tray and bake for 20–25 minutes, stirring halfway through.
  5. Leave to cool completely until crisp.
  6. Serve with yoghurt or milk and plenty of fresh berries.
