Golden and buttery on the outside, soft and custardy in the middle, this French toast is the sort of breakfast that feels like a real treat. The vanilla gives it warmth and sweetness, while the fresh berries add brightness and a lovely sharpness that balances the maple syrup beautifully.

Ingredients:

  • 6 thick slices brioche, challah or sourdough
  • 3 eggs
  • 200ml milk
  • 1 tsp vanilla extract
  • 1 tbsp caster sugar
  • Butter, for frying
  • 150g fresh blueberries (British if in season)
  • 100g fresh blackberries (British if in season)
  • 100g fresh raspberries (British if in season)
  • Maple syrup, to serve

Method:

  1. In a shallow bowl, whisk together the eggs, milk, vanilla and sugar.
  2. Dip each slice of bread into the mixture for 20–30 seconds on each side.
  3. Heat a knob of butter in a frying pan over medium heat.
  4. Cook the bread for 2–3 minutes on each side until golden and cooked through.
  5. Serve warm with the fresh berries and a generous drizzle of maple syrup.
